Stefano has brought the essence of his Milanese roots to the beautiful setting of San Diego, successfully opening three restaurants before launching his flagship Italian restaurant, PIAZZA 1909, in La Jolla. As a native of Italy with a deep appreciation for Mediterranean dining, Chef Stefano takes pride in crafting every dish from scratch. His Northern Italian cuisine blends traditional flavors with innovative creations, embracing the European slow food movement, which emphasizes fresh, high-quality ingredients and mindful preparation.
Among his signature specialties are Asparagus Ravioli in a Saffron and Speck Sauce, delicately stuffed with butternut squash and Italian sausage, served in a browned butter sauce with poppy seeds; Tagliolini ai Frutti di Mare, handmade spaghetti with fresh seafood; and a house favorite, Pesce al Sale, the catch of the day baked in rock salt to lock in its natural moisture and flavor.
